Crispy Kangkong

Crispy kangkong

Batter:

1.5 cup cornstarch
1 cup all purpose flour
2 tbsp egg replacer (optional) dissolved in 2tbsp water
Pinch of salt to taste
Add ice water until preferred thickness

Sauce:

1/2 cup mushroom oyster sauce, 1/4 cup water and 2 tbsp raw sugar.

Heat in low fire until the sugar dissolves.

Turn off heat (don’t bring to boil) and serve with sesame seeds.

Ginisang pechay

1/2 kilo pechay, chop to small pieces
1 medium red onion, diced
3 cloves garlic, diced
Canola oil
5 medium tomatoes, diced
Salt and pepper
1/2 cupWater

1. saute onion, garlic and tomatoes.
2. Add the pechay leaves when the tomatoes are almost wilted
3. Salt and pepper to taste
4. Add water and simmer for 5 minutes
5. Turn off heat and serve

They also have a mini grocery inside the cafe and frozen goods, as well! You may have seen I purchased my vegan floss and shitake broth cubes from them.

They have a wide range of tea, coffee, dried mushrooms, meat magic, sauces and many more.

Food

This is their mushroom-radish siopao. This is a savory bun and best to eat when hot.

This is their singapore bihon. It is yummy and a bit spicy.

This is their sesame mushroom. The consistency is like that of calamares. The sauce is the best!

This is our favorite. The crispy taopao. The sauce is the same as what they use in sesame mushroom.

Vegan Menudo Recipe

Ingredients:

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, squares
  • 1 carrot medium, squares
  • 2 potato medium, squares
  • 1 small pouch of tomato sauce
  • 3 bay leaf
  • 1 can of green peas
  • 1 small box of raisins
  • 1 cup of meat magic, boiled, drained and chopped
  • 2 tbsp canola oil
  • salt and pepper
  • 1 tbsp muscovado sugar

Instructions:

  1. Saute onion, garlic
  2. Add diced meat magic (precooked and drained), mixed until brown
  3. Add potatoes and carrots
  4. Add salt and pepper
  5. When the potatoes are cooked/ tender, add tomato sauce
  6.  Let it simmer for 3 minutes
  7. Add Bell Pepper
  8. Add Green Peas and Raisins
  9. Add 1/2 cup water (or depending on preference)
  10. Add muscovado sugar  and Bay leaves
  11. Let it simmer for 5-10 minutes
  12. Serve and Enjoy!

Chopsuey Recipe

One of the easiest dish you can veganize is Chopsuey. 🙂

Here’s my recipe:

Ingredients:

  • All purpose flour
  • Vegetable stir fry sauce
  • Oyster mushroom sauce
  • 2 tbsp canola oil
  • salt and pepper
  • 1 medium onion, diced
  • 3 cloves of garlic, minced
  • 2 bell pepper
  • Mushroom (white or brown)
  • 2 carrots, sliced
  • Baguio Beans
  • Enoki mushroom
  • Corn (canned)
  • Young corn
  • 1 sayote
  • Straw mushroom (canned)
  • Chinese Cabbage
  • Cauliflower
  • Add whatever vegetable you prefer

Instructions:

  1. Saute garlic and onion
  2. Add bell pepper
  3. Add all mushrooms and carrots
  4. Add cauliflower, sayote and baguio beans
  5. Add the rest of the vegetables
  6. Add 1/2 cup water, stir fry sauce and mushroom oyster sauce
  7. Salt and pepper to taste
  8. Add all purpose flour (slurry) depending on the consistency you want.
  9. Let it simmer until the sayote is cooked.
  10. SERVE and ENJOY!

Adobong Kangkong Recipe

You can pair adobong kangkong to any fried dish!

Ingredients: 

  • 1 bundle of Kangkong
  • Garlic
  • Soy Sauce
  • Vinegar
  • Black Pepper

 

Instructions: 

  1. Saute Garlic until golden brown
  2. Add 5 tbsp of soy sauce, 3 tbsp vinegar and a pinch of black pepper
  3. Add 1/2 cup water
  4. Add kangkong and let it simmer for 5 minutes

(you may adjust soy sauce and vinegar according to the amount of kangkong you are cooking. you may also use oyster mushroom sauce instead of soy sauce)

Nilagang Gulay Recipe

This is the same recipe as “Nilagang Baboy” but without the meat!

Ingredients: 

  • Chinese Cabbage
  • Baguio Beans
  • Potatoes
  • Black Pepper
  • Salt
  • Onion
  • Garlic

 

Instructions: 

  1. Boil the potatoes and Baguio beans in 4 cups of water
  2. Add a pinch of salt and pepper
  3. Add onion and garclic
  4. Boil until potatoes are cooked
  5. Add the Chinese Cabbage (or you may use cabbage)
  6. Simmer for 5 minutes
  7. Enjoy and serve!

Easy Vegan Tortang Talong

When I was an omni, I love eating tortang talong (along with white rice and ketchup) 🙂

So now, we still enjoy the same (but maybe much yummier) Tortang Talong, vegan-style!

This recipe is so easy and affordable.

Ingredients:

  • 3 Medium Sized Talong
  • Crispy Fry breading mix
  • 3 tbsp Canola oil

 

Instructions:

  1. Grill the eggplants (it’s ok to grill them on your stove top) until the skin peels off by itself
  2. Wash and peel off remaining skin from the eggplants
  3. Flatten Eggplant (like how you prefer tortang talong to be shaped)
  4. Apply crispyfry breading mix on both sides of the eggplants
  5. Fry in canola oil
  6. Fry until golden brown and take the eggplants out of the pan
  7. ENJOY! you may add ketchup or any vegan sauce you like!

Stir-fried Broccoli and Mushrooms

Here’s another easy recipe!

Ingredients:

  • 1 Pack Swiss Brown Mushroom (you can find these at SM supermarkets, open cooler section)
  • 1 Medium Broccoli
  • Ground Pepper
  • Diced Garlic (3 cloves)
  • 2 tbsp Canola oil
  • Onion powder
  • Garlic powder
  • 3 tbsp Lee Kum Kee Vegetarian Stir fry sauce
  • 2 tbsp Oyster Mushroom Sauce (optional) / soy sauce

 

Instructions:

  1. Steam the broccoli and mushrooms for about 8-10 minutes
  2. Heat a pan and add canola oil
  3. Add the garlic and stir until brown
  4. Add the steamed broccoli and mushroom and mix
  5. Add the oyster mushroom sauce and stir fry sauce
  6. Add ground pepper, onion powder and garlic powder to taste  (you may want to add a bit of water if you want more sauce, adjust the flavors)
  7. Let it simmer for 3 -5 minutes
  8. Serve and enjoy!

Sinigang na Gulay

This is the vegan version of a favorite Pinoy dish, Sinigang.

Ingredients:

  • Sibuyas
  • Bawang
  • Tamarind powder or unripe f4esh tamarind
  • Salt
  • Vegetables: (you may choose what you want to add)
  • Okra
  • Sitaw
  • Talong
  • Labanos
  • Kangkong
  • Kamatis
  • Sili pang-sigang (siling haba)
  • Gabi

Instructions:

  1. Igisa ang sibuyas at bawang
  2. Idagdag ang mga gulay (talong, okra, labanos, sitaw, kamatis, gabi)
  3. Lagyan ng tubig o hugas bigas
  4. Hintayin kumulo.
  5. Kapag kumukulo na, idagdag ang tamarind powder o kaya naman ay pinitpit na hilaw na sampaloc
  6. Lagyan ng kaunting asin naayon sa panlasa
  7. Hayaang kumulo at bahagyang maluto ang labanos.
  8. Idagdag ang kangkong at siling haba.
  9. Takpan
  10. Makalipas ang 3 minuto, patayin ang apoy
  11. Luto na! 🙂
